Dominic and April Xie bought the Cahill winery in Green Valley in 2012. They changed the named to the Greek word "to Appreciate" and hired a winemaker, Andy Piotter. He has been making wines for 27 years and came to them after being the head winemaker at Gallo of Sonoma. He wanted to work on a smaller scale hand-crafting small lots of wine. Dark purple in the glass with aromas of blackberry, currant, and cranberry, there are hints of spice also. The palate is smooth and focused on blackberry, plum, cinnamon, and slight touches of toasted oak hanging around the background. Rounding things out with barely a whisper of pepper on the finish of fine-grained tannins. A great wine for a great price. Match with Korean BBQ, American BBQ, Mongolian BBQ, get the picture?
